Tomato and Mango Salsa

• 1 small mango, sliced
• 4 plum tomatoes, skinned, seeded and chopped
• 1 small sweet onion, finely chopped
• 1 jalapeno pepper, chopped
• 1 large handful coriander, chopped
• 1 lime, juiced
• seasoning

Combine the mango, tomatoes, onion, pepper and coriander in a medium bowl.
Add the lime juice and season. Mix well and stand until ready to serve.

Minted Courgette and Feta Salad

• 1pkt of feta or goat’s cheese
• 1/2 red onion, finely sliced
• 1 green courgette
• 1 yellow courgette
• mint, coarsely chopped
• 1 lemon, juiced and zested
• 2 tbsp of olive oil
• seasoning

Mix the onion and lemon juice together set aside. Cut the cheese into cubes.
When ready to serve, using a grater or vegetable peeler slice the courgettes into thin ribbons.
Put the courgettes and cheese into the bowl with the lemon juice, zest, onion, mint and olive oil.
Mix gently, season and serve.

Turnip Salad in Sour Cream

• 2-4 young tender turnips, grated or thinly sliced
• 4-6 tbsp of sour cream (crème fraiche or greek yoghurt can be used)
• fresh parsley, chopped
• 1/4 small onion, chopped
• mint, coarsely chopped
• balsamic or white wine vinegar
• lime or lemon juice to taste
• seasoning

Add all the ingredients to a medium bowl, season and mix gently

Beetroot, Radish and Cucumber Salad

• cooked beetroot, diced
• radishes, sliced
• cucumber, chunked
• olive oil
• balsamic vinegar
• seasoning

Add all the ingredients to a medium bowl, season and mix gently

Green Fruit Salad

• 200ml apple juice
• 2 kiwi fruits, peeled and sliced
• 150g green seedless grapes, washed
• 2 green apples, cored and chopped
• 2 green pears, cored and chopped
• stem ginger in syrup

Place the apple juice in a medium bowl. Add the kiwi fruit, apple and pear.
Add the grapes either halved or whole depending on size. Mix well.
Finely chip 2-3 cubes of stem ginger, add this with a little syrup to the fruit mix.

Glasses of strawberry and mascarpone cheesecake

Strawberry and Mascarpone Cheesecake

• 100g Nice biscuits
• 75g butter
• 250g mascarpone cheese
• 125g ripe strawberries
• 125ml double cream
• 60g castor sugar

Place the Nice biscuits in a bowl and crush until crumbed. Melt the butter and mix with the biscuit crumbs.
Press the mixture into individual glasses or into a loose bottomed tin. Place in the fridge to set.
Hull the strawberries and mash with a potato masher. Mix the strawberry pulp with the mascarpone cheese.
Whip the cream and sugar to a soft peak and fold into the mascarpone mix.
Spoon the mixture into glasses or tin and refrigerate. Decorate with fresh strawberries and cream.
